This beautiful summer salad is the perfect meal for a pre/post beach day leaving your body feeling satisfied and nourished.
1 head of red leaf lettuce cleaned and chopped
1 head of green leaf lettuce cleaned and chopped
2 medium tomatoes chopped
1 large avocado chopped (about 1 cup)
1⁄3 cup sandalwood nuts roasted and chopped
¼ cup shredded mozzarella cheese (or more as desired)
3 Tbsp Olive Oil
1½ Tbsp Dijon Mustard
4 Tbsp White Wine Vinegar
- Add the salad ingredients to a large bowl and toss the chilled dressing.
- Add a little at a time until you have reached your desired amount.
- Serve immediately.
- Combine 3 Tbsp of olive oil with 4 Tbsp of white wine vinegar and 1 Tbsp of Dijon mustard.
- Add salt and freshly ground black pepper.
- Whisk them all together.
- Refrigerate until chilled.
